Happy Thanksgiving everyone! Every year I always look forward to dessert especially because of my moms classic carrot cake- it’s a recipe from my Aunt Virginia that we’ve loved since I was little! I figured I would share the recipe with all of you today so you can enjoy it as much as I do! Make sure to tag me on IG @belleoftheball45 if you make it and let me know how you like it.
Mix together sugar, oil, and eggs. Beat until light and fluffy.. Sift together flower, baking soda, and salt. Add to mixture beating well. Fold in carrots, drained pineapple, and chopped nuts. Spread in a well greased and floured 9 x 13 pan. Bake at 350 degrees for 45-50 minutes.
Let cool and frost with homemade cream cheese frosting – recipe below.
Mix cream cheese and butter until soft and smooth. Gradually add powdered sugar, salt, and vanilla. Mix well. Top cake with frosting and walnuts!
